Ingredients

  • 2 large sweet potatoes, peeled and diced medium
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 teaspoons ground turmeric
  • 1 teaspoons ground cardamom
  • 1 tablespoon fresh thyme leaves

Directions

  1. Preheat oven to 400 degrees.
  2. In a large bowl, combine all ingredients except the fresh thyme. Toss well to coat the potatoes in the seasonings and oil. Spread in a even layer on a baking sheet and bake for 30 to 40 minutes, stirring the potatoes about 1/2 way though.
  3. Once tender, remove the potatoes from the oven and sprinkle with the fresh thyme. Serve and enjoy!
