No-Bake Chocolate-Covered Cookie Dough Bars (Vegan, Plant Based)

No-Bake Chocolate-Covered Cookie Dough Bars (Vegan, Plant Based)

Remember back in the day when the best part of baking cookies was actually sneaking a taste of the dough? Except that by “back in the day” I mean that this is still 100% true today. Cookie dough is delicious. It might even be better than actual cookies. These easy chocolate-covered cookie dough bars use a simple vegan cookie dough recipe that makes it safer and healthier to indulge.

Go Ahead, Lick the Spoon

To be honest, I still don’t buy the whole “eating raw cookie dough is dangerous” thing. I just don’t think it’s true. I don’t even think it’s an old wives tale so much as a deliberate lie moms made up to keep their kids from eating all the cookie dough and/or enjoying life.

However, I am not the authority on this matter. And at the end of the day, even I have to admit that whether or not eating raw cookie dough is technically dangerous, it’s probably not good for you, so why take the risk?

Fortunately, safe, edible cookie dough is getting increasingly popular. There are even ice cream shop-style cafes where you can order it! Meanwhile, more and more recipes, like this vegan one, are making it safe to indulge in everyone’s favorite guilty pleasure.

Lighten Up!

That said, even if cookie dough is technically safe to eat, that doesn’t mean it’s exactly good for you. Like any other sweets, cookie dough is often high in sugar, fat, and calories. Moreover, it’s definitely easy to end up eating several cookies’ worth of dough without even realizing it. Trust me, I’ve been there. You may think it’s just a few licks off the spoon, but that stuff can quickly put you in some major caloric debt.

Fortunately, this vegan cookie dough recipe lightens things up while also making portion control a little easier. Instead of just you alone with a bowl of cookie dough and a spoon, this recipe slices the cookie dough into individual bars. With these separate, chocolate-covered cookie dough bars, you’ll have a better sense of when to stop…Even though you probably still won’t want to.

Meanwhile, this recipe uses lighter, healthier ingredients like almond and coconut flours as well as almond butter. And rather than sugar, this clean-eating cookie dough gets its sweetness from healthier, more natural maple syrup. Studded with semi-sweet chocolate chips and finished off with a smooth semi-sweet chocolate coating, these cookie dough bars satisfy every craving.

Let’s be honest, whether it’s a break up, girls’ night, or that time of the month, we all need to indulge now and again. Do it the safe, healthy, and clean way with this decadent vegan cookie dough recipe.
