My mother always used to say that the hardest part of cooking wasn’t the cooking part at all: It was the timing. Growing up, my family always divided the burden of preparing holiday meals by assigning different holidays to different kitchens. My mom was in charge of Christmas Eve and Easter. I was always amazed by how she managed to prepare every entree, side, dressing, and sauce while also managing to get it all out on the table at the same time–and at each dish’s optimal temperature, too!
It certainly was no easy feat, and sometimes even she wondered how she managed to pull it off with only one kitchen. In the absence of a second oven, my mom’s success depended on multiple slow cookers. While the oven bore the supreme responsibility of the main entree, the slow cookers took on any sides they could handle (which turned out to be most of them). There’s really not much a slow cooker can’t do. It can even roast potatoes!
Preparing your roasted potatoes in the slow cooker may take a little more time than tossing them in the oven, but it can really help to have that oven space freed up. Moreover, once you get the potatoes prepped and in the slow cooker, you don’t even have to think about them. The slow cooker will do its thing while you’re freed up to to do your thing (or 12 different things). 2 to 3 hours later, you’ll have perfectly tender, golden-brown potatoes.

Garlic and onion powder create a traditional flavor profile, while crushed red pepper adds the slightest bit of a kick to this simple side. Ingredients
- 2 tablespoons olive Oil
- 4 medium red potatoes, cubed into 1/2 inch pieces (skins on)
- 4 cloves garlic, minced
- 2 teaspoons garlic powder
- 1 tablespoon onion powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper
- 1 teaspoon Kosher salt
- 1 tablespoon butter
Instructions
- Add oil to the slow cooker, turn to high and allow to heat up for about 15 minutes
- Combine all ingredients, except the butter, in the slow cooker, toss potatoes in the hot oil and seasonings, cover and cook on high 2-3 hours (4-5 hours on low), or until potatoes are tender and browned.
- Add the butter and lightly toss. Serve hot and enjoy!
