Instead of using mayonnaise, they also grind up raw cashews with lemon juice to create a creamy sauce. Finish it off with a few herbs and spices to give it a flavor pop. It’s a great substitute for a chicken or tuna salad!
2. Lentil Mushroom Meatball Collard Wrap Subs
This is quite the recipe from Keepin’ it Kind: It’s a vegan answer to a humble meatball sub. Lentils and mushrooms make up the meatballs, which are tossed in a spicy marinara and serve rolled-up in collard leaves. When packing this wrap for a lunch later, I’d recommend keeping the meatballs in a separate container. Then heat them up and roll them in the wrap just before eating to keep the collards from getting soggy!

There are a lot of flavors and textures going on here, but the result is an out-of-this-world, healthy sandwich that’s perfect for lunch!
6. Creole Chickpea Salad Sandwich

Mashed chickpeas serve as the base, and the rest of the ingredients remind us of our favorite chicken salad: celery, grapes, and dill. The addition of a Creole mayo though, makes it interesting and kicks it up a notch. You can make this healthy sandwich ahead of time and pre-portion it out for the week. All you have to do is grab it and slap it on some bread or lettuce when lunch time rolls around!
7. Vegan Club Sandwich
A good club sandwich is perfect for a take-along lunch. This completely meat-free version by Oh My Veggies is exactly what you look for in filling, plant-based sandwich recipes! Yummy, marinated tofu is topped with “coconut bacon”, lettuce, tomato, and avocado. It does require a little bit of preparation ahead of time, though, so you wouldn’t want to wait until the morning of to make it!
8. California Veggie Sandwich
Layers of textures and flavors pop in your mouth with this sandwich from Pickled Plum! Pickled carrots, mashed avocado, goat cheese spread, cucumbers, sprouts, and spinach are piled high on multigrain bread. It’s a taste of California in every bite!
9. Tomato, Mozzarella, and Basil Panini
This SkinnyMs. recipe starts off with whole wheat bread slices, juicy tomatoes, fresh basil, mozzarella cheese slices, and olive oil. The sandwich is then cooked and flattened until golden crisp, yielding creamy, melted cheese that pairs perfectly with bold basil and sweet tomatoes.
