It can be tough finding really good vegetarian sandwich recipes to pack for lunch, though. Most sandwich toppings seem to include some kind of meat, and one cannot live on peanut butter and jelly alone!

A Virtual Vegan brings us a very hearty sandwich filling that is completely vegan. White beans and artichokes serve as the base while sunflower seeds add a nice crunch. Instead of using mayonnaise, they also grind up raw cashews with lemon juice to create a creamy sauce. Finish it off with a few herbs and spices to give it a flavor pop. It’s a great substitute for a chicken or tuna salad!

2. Lentil Mushroom Meatball Collard Wrap Subs

This is quite the recipe from Keepin’ it Kind: It’s a vegan answer to a humble meatball sub. Lentils and mushrooms make up the meatballs, which are tossed in a spicy marinara and serve rolled-up in collard leaves. When packing this wrap for a lunch later, I’d recommend keeping the meatballs in a separate container. Then heat them up and roll them in the wrap just before eating to keep the collards from getting soggy!

3. Marinated Veggie Cheese Sandwich with Sun-Dried Tomato Pesto

Half-Baked Harvest serves up a grilled cheese on veggie steroids! Marinated grilled veggies are layered with two different kinds of cheese, sun-dried tomatoes, and pesto on a crusty ciabatta bun. Vegetarian sandwich recipes just don’t get any better than this!

4. Smashed Chickpea Avocado Sandwich

This sandwich from Jessica in the Kitchen is a perfect lunch to pack for work (or, for school if your kids are progressive enough to try this tasty sandwich). It’s so simple to make, too! Just smash an avocado with chickpeas and add in some spices and lime juice. Then, slap it onto a couple of pieces of bread, and you’re set!

5. The Ultimate Superfood Sandwich

Eating Bird Food threw every superfood in the book into this sandwich! Sweet potato and kale take the hoagie bun stage, and they’re backed up by goat cheese, quinoa, and an olive tapenade. There are a lot of flavors and textures going on here, but the result is an out-of-this-world, healthy sandwich that’s perfect for lunch!

6. Creole Chickpea Salad Sandwich

Here is another vegan chicken salad replacement from Stacey Homemaker! Mashed chickpeas serve as the base, and the rest of the ingredients remind us of our favorite chicken salad: celery, grapes, and dill. The addition of a Creole mayo though, makes it interesting and kicks it up a notch. You can make this healthy sandwich ahead of time and pre-portion it out for the week. All you have to do is grab it and slap it on some bread or lettuce when lunch time rolls around!

7. Vegan Club Sandwich

A good club sandwich is perfect for a take-along lunch. This completely meat-free version by Oh My Veggies is exactly what you look for in filling, plant-based sandwich recipes! Yummy, marinated tofu is topped with “coconut bacon”, lettuce, tomato, and avocado. It does require a little bit of preparation ahead of time, though, so you wouldn’t want to wait until the morning of to make it!

8. California Veggie Sandwich

Layers of textures and flavors pop in your mouth with this sandwich from Pickled Plum! Pickled carrots, mashed avocado, goat cheese spread, cucumbers, sprouts, and spinach are piled high on multigrain bread. It’s a taste of California in every bite!

9. Tomato, Mozzarella, and Basil Panini

This SkinnyMs. recipe starts off with whole wheat bread slices, juicy tomatoes, fresh basil, mozzarella cheese slices, and olive oil. The sandwich is then cooked and flattened until golden crisp, yielding creamy, melted cheese that pairs perfectly with bold basil and sweet tomatoes.
