Hot Chicken Sliders

As Americans, we have a reputation for many things, including massive portion sizes. And yet, while the American mantra seems to be “the bigger the better,” every once in a while we seem to embrace a taste for the little things in life. Case in point: sliders. They’re little, they’re trendy, and everyone loves them. Better yet, if you treat sliders as a meal rather than an appetizer, they’re actually a perfect sensible serving size.

Sometimes the easiest way to slim down a meal is actually just to make it smaller. Sliders make it easy to enjoy your favorite burgers and sandwiches on a smaller (and therefore slimmed down) scale. Essentially, they take the self-control out of portion control. The hard work does itself!

These hot chicken sliders are a tasty, trendy, perfectly portion-controlled way to enjoy a spicy breaded chicken sandwich. These hot and juicy mini sandwiches are perfect for summer barbecues or game day parties.

Spicy and Savory

These tasty hot chicken sliders get their signature flavor from a blend of classic spices. Cayenne pepper, chili power, and paprika make this sandwich pop with bold flavor. Meanwhile, garlic powder adds a more muted, savory taste.

This delicious, hot and spicy Southern-inspired fare stays skinny thanks to clean, slimmed-down ingredients. With simple substitutes like low-fat buttermilk and whole-wheat flour and breadcrumbs, the classic buttermilk fried chicken sandwich becomes completely clean-eating friendly.

Coated in buttermilk and breadcrumbs, the chicken is baked to a crispy perfection, then coated in a sweet and savory mixture of olive oil, spices, garlic powder, and coconut sugar.

Faster Than Fast Food

This baked buttermilk chicken sandwich may sound like fried fast food, but it’s actually much tastier, healthier and just as easy as pulling up to the drive through window. These hot chicken sliders cook in just ten minutes, and shouldn’t take any more time for prep. You can toss this super easy recipe together any time you need a quick party app or even a fun and tasty dinner.

Serve these hot chicken sandwiches on whole wheat slider buns and top with pickles for an extra touch of tangy flavor. You can also try serving these buttermilk chicken sliders with your favorite aioli. This simple skinny aioli from our roasted artichoke recipe goes great with these spicy sliders (and also with our crispy oven-fried pickles!)

However you serve them, these hot chicken sliders are sure to be a favorite. Enjoy!

Hot Chicken Sliders

Ingredients

  • 4 (4 to 6 ounce) boneless and skinless chicken breast (cut in 1/2 to make 8 pieces)
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon Kosher salt
  • 1 egg
  • 1/4 cup low-fat buttermilk
  • 2 teaspoons vinegar based hot sauce (such as Tabasco)
  • 1/2 cup whole wheat flour
  • 1 cup whole wheat panko bread crumbs, pulsed in a food processor
  • 2 tablespoons olive oil
  • 1 teaspoon cayenne pepper
  • 2 teaspoons coconut sugar
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 8 whole wheat slider buns
  • 1 large pickle, sliced in to 8 circles (one slice for each slider)

Instructions

  1. Preheat oven to 450 degrees. Line a baking sheet with foil and spray with nonstick spray; set aside.
  2. Season the chicken with the salt and pepper. Set aside.
  3. In a small bowl whisk together the egg, buttermilk, and hot sauce. Place the flour in a second bowl, and the panko in a third bowl. Dip the chicken pieces in the flour, then the egg mixture, and last the panko, making sure the chicken is coated on all sides.
  4. Place on the prepared baking sheet and bake for 10 minutes or until golden brown and chicken is firm and cooked through.
  5. While the chicken is baking, mix together the olive oil, cayenne, coconut sugar, chili powder, garlic powder, and paprika. Remove the chicken from the oven and brush the chicken and the inside of the slider buns with the oil and spice mixture.
  6. Place each piece of cooked chicken on to a bun, top with pickles. Serve.
