Ingredients

  • 24 pitted dates, soaked in warm water for about 5 to 10 minutes
  • 2 cups rolled oats
  • 2 tablespoons chia seeds
  • 2 tablespoons unsalted sunflower seeds
  • 1 cup raw pistachios
  • 1/3 cup fresh lemon juice
  • 2 teaspoons lemon juice
  • 1/2 teaspoon almond extract
  • 2 teaspoons ground turmeric
  • 1 cup unsweetened coconut, shredded

Instructions

  1. Combine all ingredients, except coconut, and place in a food processor. Blend until almost smooth (a few chunks is ok).
  2. Roll the mixture into 1 inch balls, and then roll the balls in the coconut flakes. Place on a parchment lined baking sheet. Refrigerate for about 15 minutes before serving. Store, refrigerated, in an air tight container.
