These Classic Lemon Bars Are Simple and Delicious!

I’ve baked and cooked for my share of picky eaters, but I have never known anyone to turn down a lemon bar. A delicate dessert filled with homemade goodness, lemon bars are an instant favorite. Light, sunny and sweet, these classic lemon bars are a delicious treat for all seasons.

When I was a kid, baking was one of my favorite pastimes. It was one of my favorite activities for weekends and free time. Ingredients

  • For the Crust:
  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 2 tablespoons coconut sugar
  • 3 tablespoons coconut butter
  • For the Lemon Filling:
  • 2 eggs
  • 1/2 cup coconut sugar
  • 1 tablespoon coconut flour
  • 2/3 cups lemon juice
  • 1 teaspoon lemon zest

Directions

  1. For the Crust:
  2. Preheat the oven to 350 degrees. Spray a 9 x 9 inch baking pan with non-stick spray.
  3. Using your hands, mix all ingredients together until the mixture resembles fine crumbs. Press into the bottom of the prepared baking pan. Bake for 10 minutes or until golden brown. Remove from oven and cool completely.
    For the filling:
  4. Whisk all ingredients together in a large mixing bowl until smooth. Pour over the cooled crust. Gently tap the pan so any bubbles rise to the surface and pop each bubble with a tooth pick. Removing the bubbles will make the baked lemon bars smooth and creamy!
  5. Bake for 10 to 20 minutes or until the filling is set and firm. Remove from the oven and cool completely before slicing and serving.
