3. Gluten-Free BLT Pasta Salad
Lexi’s Clean Kitchen has some great clean recipes! Along with her recipe above, this BLT pasta salad recipe is super scrumptious for all ages. And let’s not forget that it gives busy moms something that they not only want, but sort of need: a super fast dinner. It can actually be ready in less than 30 minutes!
4. Garlic Zoodles with Fried Chickpeas
When I was a kid, I loved spaghetti–and, of course, I still do. My point, however, is that kids love spaghetti for pretty much one reason: it’s fun to eat. There’ s nothing like twirling the noodles around and around on your fork. This recipe by The Pretty Bee replaces those noodles with zoodles (noodles made out of zucchini). It still gives kids that fun while giving moms the satisfaction of having a healthy dinner that can be made in under 30 minutes. Plus, it’s grain-free and vegan!
5. Super Easy Cauliflower Fried Rice
Tell your kids fried rice is for dinner! If they’re anything like younger me, they’ll jump up and down for joy. If you choose to leave out the fact that this fried rice is made with cauliflower instead of rice, your kids probably won’t even question it. It tastes just as good as the normal dish, but provides a LOT more health benefits like:

7. Crispy Quinoa Patties with Spinach and Tomatoes
Vegan, crunchy, and loaded with nutrients, this meal by Jessica in the Kitchen will leave you and the family more than satisfied. Now, I know that you’re thinking that most kids aren’t going to eat something that’s laying in a bed of greens. If your little ones fall into that category, just serve them the Crispy Quinoa Patties separately! They’re so crispy like chicken nuggets, they may even mistake them for that favorite dinner of theirs!
