Ham and Egg Breakfast Cups

Breakfast is hands down the most versatile meal out there. Morning meals run the gamut from sweet to savory and everything in between, with tons of options and flavor combos.

And with plenty of options comes plenty of debate. Pancakes or waffles? Eggs fried or scrambled? Home fries or hash browns? These are the kinds of make or break breakfast arguments which define individuals and tear families apart.

And we haven’t started on breakfast meats yet. From classics like sausage and bacon to more obscure (and questionable) choices like scrapple and corned beef hash, there’s no end of options.

It’s a matter of opinion, of course, but I’ve always been a fan of ham and eggs. From omelets to casseroles and breakfast sandwiches, this classic combo can do no wrong. When I was in preschool, our teachers brought in green eggs and ham during our much anticipated Dr. Seuss unit. Most of the other kids refused to touch the food colored eggs (they clearly missed the moral of the story), but I devoured every last bite.

I still love this flavor combo, although these days I usually ditch the green food dye. These ham and egg breakfast cups take this breakfast combo to the next level. These breakfast cups are cute, creative, and simple, and make a genius addition to any brunch or breakfast bar.

And besides being cute, elegant, and fun, these egg cups are also healthy.

For these super easy ham and egg breakfast cups, you’ll need just five ingredients and twenty minutes in the oven. To make the ham cups, just take thin slices of ham (all natural and low sodium) and place them into greased muffin tins. Then, just whisk together eggs, egg whites, skim milk, and chopped onions. Pour this mixture into your ham cups and pop in the oven at 350 for a quick and easy breakfast that looks super cute and fancy!

After about twenty minutes in the oven, the eggs will be completely set. Just be careful not to overfill the ham cups, you want to fill them about 3/4 of the way to ensure the cups keep their shape. This recipe makes twelve cups, which makes these ham and egg breakfast cups a perfect dish to bring to a brunch or breakfast party. Alternately, this is a great recipe to make ahead and save for fun and fast weekday breakfasts.

Even even if Dr. Seuss totally turned you off with his green eggs and ham, these ham and egg breakfast cups just might convince you to give it a second chance (without the food dye).

Ingredients

  • 12 thin slices all-natural and low-sodium ham
  • 3 eggs
  • 3 egg whites
  • 1/2 cup skim milk
  • 2 green onions, chopped

Directions

  1. Preheat oven to 350.
  2. Lightly spray a muffin tin with non-stick spray. Press each ham slice into the muffin pan, creating a cup shape.
  3. In a mixing bowl, whisk together the egg, egg whites, and milk. Stir in the green onion and pour into the ham cups until about 3/4 full. Bake until eggs are completely set, about 20 minutes. Remove and allow to cool slightly before serving. Enjoy!
