Crock Pot Gingerbread Latte

My regular coffee order literally changes with the weather. Or at least with the seasons. I just cannot resist ordering whatever seasonal flavors appear on the menu, even the more questionable ones.

Of course, pumpkin spice lattes will always reign supreme, but there is a special place in my heart for winter holiday flavors as well. The day after Thanksgiving, pumpkin spice season may expire, but at least it means it’s time to bring on the gingerbread lattes.

If you’re like me and blow your entire paycheck at Starbucks every week for the entire month of December, I have some good news. You may think there’s no good at home alternative to your favorite seasonal latte. But the perfect at home latte is easier than you think.

Turns out, you don’t need a fancy espresso machine or the magic touch of a Starbucks barista. All you need to make your favorite gingerbread latte in the comfort of your own home is a slow cooker.

Yep, that’s right. Just when you thought you finally knew EVERYTHING you could possibly make in a slow cooker, we throw lattes into the mix. But it’s true. If you have a slow cooker, you can make the perfect crock pot gingerbread latte at home. Starting to regret all the money you’ve spent on those famous red cups? Yeah, us too.

Anyway, this recipe really is that easy, and I promise it is just as delicious as your local coffee shop.

The best part is, you can probably make this recipe with things you already have at home. This recipe uses simple ingredients like skim milk, maple syrup, and vanilla extract. Flavored with nutmeg, cinnamon, and ground ginger, this recipe achieves that perfect blend of seasonal spices. Combine with strongly brewed coffee or espresso, and this crock pot ginger bread latte is the perfect answer to your seasonal caffeine cravings.

For this recipe, simply combine all ingredients and cook on low for three hours, stirring occasionally. Then, turn the crock pot down to the keep warm setting and cook for another two hours. Just make sure you remember to stir occasionally and don’t let the mixture boil!

It may not be quite as quick as heading to the drive through in the morning, but it’s just as delicious, and definitely cheaper. Make a batch for a weekend treat, serve at a holiday party, or just make ahead and reheat for your morning caffeine fix.

Ingredients

  • 6 cups skim milk
  • 1/4 cup pure maple syrup
  • 2 tablespoons coconut sugar
  • 3 teaspoons ground ginger
  • 1 teaspoon pure vanilla extract
  • 2 cinnamon sticks
  • 1/2 teaspoon ground nutmeg
  • 3 cups strongly brewed coffee or espresso

Directions

  1. Combine all ingredients in crock pot and cook on low for 3 hours, stirring occasionally making sure the mixture doesn't boil.
  2. Place the crock pot on to the keep warm setting, and cook for another 2 hours. Again, stirring occasionally and making sure the mixture doesn't boil.
  3. Ladle into serving cups, and enjoy! If you're feeling indulgent, top with fresh whipped cream!
