Ingredients

  • 1 cup oats
  • 3/4 cup whole wheat flour
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 2 tablespoons coconut oil, melted
  • 1/2 cup coconut milk
  • 2 egg whites
  • 1 teaspoon almond extract
  • 1 cup granulated coconut sugar
  • 1 cup carrots, finely grated

Directions

  1. Preheat oven to 325 degrees. Line a baking sheet with parchment paper and set aside.
  2. In a small mixing bowl, combine the oats, flour, baking powder, cinnamon and clove. Mix well and set aside. In a large mixing bowl, combine the coconut oil, coconut milk, egg, almond extract, and honey. Stir until well combined and then gradually add the flour mixture. Continue to mix until just combined. Fold in the carrot.
  3. Drop the batter by the spoonful (about 1 tablespoon) on to the prepared baking sheet. Bake 8 to 10 minutes or until lightly browned. Cool slightly before serving.
