Ingredients
- 1 1/2 cup fat free coconut yogurt (this is vegan yogurt, plain Greek yogurt can be substituted)
- 2 teaspoons matcha powder
- 1 banana
- 1/2 teaspoon ground cinnamon
- 1 cup coconut milk
- 1 teaspoon fresh ginger, minced
- 2 teaspoons maple syrup (optional)
- 1/4 cup chia seeds
Instructions
- In a blender, combine the yogurt, matcha, banana, cinnamon, coconut milk, ginger, and maple syrup (if using). Blend until smooth. Stir in the chia seeds.
- Pour into serving glasses, cover, and refrigerate overnight.
- Before serving, remove from the refrigerator. If too thick stir in additional coconut milk. Serve and enjoy!
