This dijon roasted garlic asparagus is definitely my new favorite way to prepare asparagus.
Just a few years ago, I wouldn’t have imagined I’d ever enjoy any form of asparagus, let alone have a favorite. Asparagus and I haven’t had the best history.
I decided I didn’t like it at a young age, pretty much just because it was green and my parents did like it. To make matters worse, I once had a traumatic experience at my best friend’s beach house during which her dad scolded me and essentially forced me to eat asparagus. This also happened to be the same summer we got sent to her room for stealing a single wine cooler.
We were eighteen years old, by the way.
But I digress. Anyway, asparagus and I got off to a rocky start, but we’ve since made our peace, and I am a newly-converted asparagus lover.
Whether you’re a long-time asparagus fan or you still need some convincing, I have a feeling you’re going to love this dijon roasted garlic asparagus.
Now Onto the Recipe
This is the perfect asparagus recipe because it really lets the natural flavors of this veggie shine, but it also adds more delicious flavor.
Dijon, garlic, and lemon juice make this a tasty and zesty side dish. Roasted to perfection, this garlic mustard asparagus is warm, fragrant, and flavorful.
In my opinion, however, what really makes this recipe is the parmesan cheese. For the final touch, just sprinkle a little parmesan cheese over the fresh roasted asparagus. Right after it comes out of the oven, this last touch adds just a little bit of crispy, cheesy flavor. It’s optional, but I definitely recommend it for anyone who likes things on the cheesy side. This garlic mustard asparagus is also super simple to make. Ready in under fifteen, it’s a simple side to whip up last minute.

Ingredients
- 2 cloves garlic, minced
- 3 tablespoons Dijon mustard
- 1 teaspoon olive oil
- 1 teaspoon lemon juice
- 1 pound fresh asparagus, ends trimmed
Instructions
- Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray.
- In a bowl, combine the garlic, Dijon, olive oil, and lemon juice. Mix well.
- Spread the asparagus in a single layer on the baking sheet and drizzle the Dijon mixture over the top and lightly mix. Bake for 10 minutes or until the asparagus is tender. Serve hot.
- Optional: sprinkle 3 tablespoons of grated parmesan cheese over the top of the asparagus after baking and before serving.
