There’s nothing I love more than a caramel apple. It reminds me of when we used to go to the annual fall festival as kids and wander through the pumpkin maze. There would inevitably be a bobbing-for-apples station (which, I was always terrible at) followed by a sticky, messy, gooey caramel apple (which I think my mother bought me as a reward for my bobbing efforts). As an adult, I never feel quite right about eating caramel apples – especially now that I’m trying to eat more of a plant-based diet. This Vegan Caramel Apple Parfait is the perfect solution. It’s a healthier version of my childhood favorite, and that vegan caramel is to-die-for!
This recipe makes the perfect breakfast when you’re looking for something simple and sweet to kick-start your day. It also make a pretty incredible mid-afternoon snack, and it’s sweet enough that you could eat the leftovers for dessert, too! No matter how you enjoy it, I would recommend doubling up the recipe for the vegan caramel sauce. It’s so rich, creamy, and silky that you won’t believe it’s made from plant-based ingredients.
Let’s Celebrate Vegan Caramel
If you’re following a vegan diet, there are probably a few things you mourn. I miss sour cream (although, this dairy-free sour cream makes an incredible substitute) and everything made with butter. I like coconut oil okay, but there’s something unctuous and satisfying about good old butter. And, some of my favorite recipes are made with it.
Really, caramel is a three-ingredient recipe that contains everything I’m trying not to eat anymore. It’s basically sugar that’s been caramelized in melted butter. Once it reaches the desired color, you pour in heavy cream to make the mixture extra creamy and drizzle-able. Not exactly filled with healthy, plant-based ingredients! Okay…so how in the world are we making a caramel we can eat?
The most brilliant thing about this Vegan Caramel Apple Parfait is how easy it is to make plant-based caramel sauce. When you combine melted coconut oil, pure maple syrup, and almond butter, it looks (and tastes) almost exactly like the real deal. You’ll be able to drizzle it – just like real caramel – and it pairs perfectly with apples to create the ultimate fall-flavored experience. That sounds like winning to me!
Top It Off With Granola
Our favorite granola recipe is perfect for this Vegan Caramel Apple Parfait. You’ll need to substitute maple syrup for the honey to make it a plant-based recipe, but it’s not far off. We love that this recipe is full of heart-healthy oats and nutrient-packed pumpkin seeds. It adds protein to the parfait while also keeping you feeling full with all that healthy fiber. Yum!
The granola really makes this parfait the complete package. You get a thick, creamy coconut chia-seed pudding as the base; nutty, crunchy granola as the middle; and sweet, caramel-y apples as the topping. For me, this Vegan Caramel Apple Parfait is a nostalgic experience in a cup. It just happens to be one that’s much, much healthier than the one I was eating as a kid.

Ingredients
- 2 cups almond milk
- 1/4 cup chia seeds
- 1 teaspoon ground cinnamon
- 1/4 cup coconut oil, melted
- 1/4 cup pure maple syrup
- 2 tablespoons almond butter
- 1/2 cup apples, peeled, cored, and diced
- 1/2 cup granola
Instructions
- In a small bowl, combine the coconut milk, chia seeds, and ground cinnamon. Cover and refrigerate for one hour.
- Meanwhile, make the vegan caramel by combining the coconut oil, maple syrup, and almond butter in a small bowl. Whisk until the mixture is well combined and very smooth. If it's hard to whisk, pop it in the microwave for 10 seconds. Cover the mixture with plastic wrap until you're ready to serve.
- Divide the coconut mixture between four glasses. Top each glass with a layer of the granola followed by the chopped apples.
- Drizzle the apples with the vegan caramel and serve.
